Cajun Chicken
Preparation time: 5 minutes | Cooking time: 20 - 25 minutes | Serves: 4 - 8
Ingredients
3 - 4 tbsp Deep South spices
8 chicken drumstick or thighs
¼ cup honey
2 tbsp apple cider vinegar
Heat the oven to 220°C.
Mix the honey and apple cider vinegar in a bowl and set aside for later.
Place the chicken on a baking sheet lined with tinfoil. Season with salt and pepper and liberally sprinkle all over with the Deep South spices. Cover with tinfoil and bake in the oven for 20 - 25 minutes until chicken is cooked. If you have a thermometer the internal temperature of chicken is cooked at 65°C out of the oven. If not you’ll know the chicken is done when it is no longer pink inside and the juices are clear.
Brush the chicken with the honey / vinegar mixture. Place under a pre-heated grill until the edges are crispy, turning once.
