Southern Baked Fish

Preparation time: 5 minutes  | Cooking time: 15 minutes | Serves: 4 


Ingredients

2 tbsp Deep South spices

4 cod fillets

olive oil

100g breadcrumbs

4 scallions, finely chopped 

1 lemon, zest and juice


Preheat the oven to 200°C

In a bowl mix the Deep South spices, breadcrumbs, 1 tbsp olive oil, scallions and lemon zest.

Brush the cod with olive oil and a squeeze of lemon and season with salt and pepper. Top with the breadcrumb mixture and bake in the oven for 15 minutes or until the fish is cooked.

SERVING SUGGESTIONS: Serve with new potatoes and braised green beans (see p. xx)
