Chicken and Halloumi Skewers

Cooking time: 20 - 25 minutes
Serves: 2 - 4
2 tbsp Mexican spices
1 tbsp olive oil
juice and zest from half a lime
1 tbsp tomato purée
4 chicken thighs, cut into chunks
200g halloumi, cubed
1 red pepper, cut into chunks
Preheat the oven to 200°C. Soak the skewers in a bowl of water.
Mix the Mexican spices, olive oil, lime juice, tomato purée and lime zest in a bowl. Throw the chicken, halloumi and red peppers into the bowl, season with salt and pepper and coat them in the marinade.
Thread chicken, halloumi and red peppers alternately onto the skewers without any gap in between the pieces.
Place the skewers on a foil-lined pan and bake for 20-25 minutes until the chicken is cooked through, turning them over once midway.
SERVING SUGGESTIONS: serve with homemade chips and greek yoghurt.
